Fool b'Zeit (Fresh broad beans) -

       Ingredients How to?

  •  1kg soft fresh broad beans with the outer shell
  •  3 onions chopped
  •  4 cloves of garlic crushed
  •  1/2 cup fresh coriander chopped
  •  1 tbs ground coriander
  •  3 tbs lemon juice
  •  4 tbs olive oil
  •  1 cup water
  •  Salt & pepper

     

  • Top and tail the beans, and cut into small pieces. Wash then drain.
  • Heat oil in saucepan, add onions and fry till soft, add garlic, ground coriander, and the beans, fry for 15 minutes, then add the water, lemon juice, salt and pepper.
  • Lower the heat, cover and cook for 45 minutes.
  • When the beans are cooked, add fresh coriander, stir and cook for 5 more minutes.

    Serve warm or cold.
