Fool Moudamas (A broad bean dish) -
2 cups of dried broad beans soaked overnight in
water with 1 tsp bicarbonate of soda
1/2 cup lemon juice
4 cloves of garlic crushed
Salt & pepper
Drain and wash the beans, put in a sauce pan with
enough water to cover the beans generously.
Boil, then lower the heat & cover and simmer for
2 hours, or till the beans are well cooked. Mash the
beans with a potato masher, and add the rest of the

olive oil on top.
