Sweet Corn Vegetable Soup -
The ever popular sweet corn soup with vegetables

       Ingredients How to?

  • Sweet corn kernels - 1/2 cup
  • Creamed sweet corn - 150 grams
  • Cabbage, finely chopped - 1/4 small
  • Carrot, chopped - 1/4 medium
  • Cornflour/ corn starch - 3 tablespoons
  • Oil - 2 tablespoons
  • Vegetable stock - 4-5 cups
  • Salt to taste
  • White pepper powder - 1/4 teaspoon
  • Sugar - 1/2 tablespoon
  • Spring onion greens, chopped - 1 stalk

  1. Mix the corn flour in a half a cup of water and keep aside. Heat the oil in a wok or a pan and add the cabbage, carrot and corn kernels. Stir fry for a couple of minutes. Stir in the vegetable stock and bring it to a boil.
  2. Mix in the cream style sweet corn and continue cooking for two to three minutes or until the cream style corn is mixed well. Add the salt, white pepper powder, & sugar.
  3.  Stir in the corn flour mixture and cook on high heat for a minute or until the soup has thickened, stirring continuously.
  4. Serve piping hot, garnished with spring onion greens.
