Prawn and mushrooms in spicy chilli
sauce with whisked egg poured over it

Small prawns, peeled and deveined - 1 cup
Button mushrooms, sliced - 8
Eggs, beaten - 8
Salt to taste
Leek - 1
Olive oil - 4 tablespoons
Corn flour/ corn starch - 8 teaspoons
Bean sprouts - 8 tablespoons
Chilli sauce - 1 teaspoon
Dark soy sauce - 2 teaspoons
For each omlette trim and finely slice 1 inch piece
of leek. Finely slice 2 mushrooms.
Break 2 eggs into a bowl, add salt and whisk well.
Heat 1 tbsp olive oil in a non stick pan. Add leeks and
let them sweat for a few seconds.
Add mushrooms and let them sweat for a few seconds.
Add 2 tsp corn flour to ¼ cup prawns and mix well. Add
them to the mushrooms and cook on high heat. Add 2 tbsp
bean sprouts, ¼ tsp red chilli sauce, ½ tsp soy sauce
and mix well.
Add the whisked eggs and reduce heat. Mix lightly
and then let the eggs set. When the underside is done
and the edges begin to leave the sides of the pan, roll
up the omlette, flip and let it cook evenly on all
